3 essential nutrients needing extra attention in the green transition

Kost Studio publishes a new catalogue to spark conversations on essential nutrients in plant-rich diets.

Moving towards plant-rich diets is necessary for people and the planet. But as research shows, some essential nutrients are either absent or less available in plants compared to meat. This raises important questions: What nutritional risks should we consider when promoting plant-rich diets, and how can they be addressed?

We wanted to explore that in a Nordic context, so we spoke with leading experts to gain insights. This led us to dive deeper into three specific essential nutrients: iron, vitamin B12 and omega-3 fatty acids, all sourced greatly today from meat and fish.

Find the articles within this tightly wrapped catalogue which gives them important context:

  1. As plant-rich diets rise, will iron deficiency rise too?

 With Professor Susanne Gjedsted Bügel

  1. Could vitamin B12 deficiency be a concern for flexitarians too?

With Assistant Professor Paulina Deptula

  1. A plant-rich future still needs the sea

With Professor Ole G. Mouritsen

This catalogue is more than a publication—it’s part of a broader effort to create space for interdisciplinary dialogue and action. Through networking events, workshops, and resources like this, we’re working to connect researchers, entrepreneurs, and food professionals to rethink the future of food together.

Because for the right minds, a “huge problem” is just another word for “huge opportunity.”

This catalogue is created through the Interdisciplinary Future Food Network, funded by GUDP under the Ministry of Food, Agriculture and Fisheries.
